Baked rice with chicken and apple

Chicken is marinated with salt, pepper, soya sauce and fried. Rice is fried with apples and vegetables, seasoning to taste. Here, I use some white wine to fry rice, creating a particular flavor. Then, put the rice and chicken in the baking tray, pour the chicken broth, bake in the oven for about 30-35 minutes until the rice is dried.
Ingredients
For marinating chicken
  • 4 chicken thigharound 700gr
  • 1teaspoon salt
  • 1teaspoon pepper
  • 1tablespoon soya sauce
  • 4cloves garlic
For frying rice
  • 2bowl rice
  • 1 apple
  • 200gr carrot
  • 80gr onion
  • 4cloves garlic
  • 2 shallot
  • 1teaspoon salt
  • 3tablespoon soya sauce
  • 1tablespoon white wine
  • cooking oil
Instructions
  1. Mince garlic and shallot. Divide garlic into 2 parts: ½ for marinate chicken, ½ mix with minced shallot for frying rice
  2. Marinate chicken with garlic, salt, pepper and soya sauce (above formula)
  3. Chop carrot, onion and apple
  4. Turn on the stove, add some cooking oil to the pan, when it is hot, add the onion and garlic and stir until fragrant. Then put carrot in, stir lightly and continue to add onion, season with salt and stir well.
  5. Stir in white rice and apples. Season with soy sauce, and then add white wine. Continue to stir until the rice grains are separated and the spices are mixed well. Pour the fried rice into a bowl (the one can be used for the oven). Use spatula to spread rice
  6. Add cooking oil to another pan to fry the chicken, keep oil half-filled of chicken thigh. Fry chicken thighs lightly (not getting golden). Remove the chicken thighs, drain the oil and put them in a bowl (on top of the prepared rice).
  7. Put the rice in the oven at a temperature of 180 degrees Celsius, using top heat, for 30-35 minutes until the chicken thighs turn golden brown and the rice with vegetables dried. Note: preheat the oven 15 minutes before baking to keep the temperature stable.
  8. Serve on plate, garnish with some coriander.
