Baked vegetables

There will be lots of meat and fish on the Christmas party’s table. Baked vegetables are a perfect side dish to help you balance your taste. If you like the sweet taste, you can sprinkle with honey along with olive and vinegar before baking!

Ingredients
  • 500gr potatoes
  • 450gr tomatoes
  • 400gr mushrooms
  • 300gr cucumbers
  • 250gr baby carrots
  • 80ml olive oil
  • 70ml rice vinegar
  • 1thìa cafe salt
  • rosemary leaves
Instructions
  1. Wash all types of vegetables (potatoes can be peeled or not).
  2. Cut cucumber vertically.
  3. Adjust the oven to 180°C.
  4. Arrange vegetables in a tray, sprinkle with olive oil and vinegar, add salt.
  5. Sprinkle some fresh rosemary leaves on top.
  6. Put in the oven for 40 - 45 minutes.
  7. Eat while it's still hot.
