I will give you this delicious preserved lime sauce recipe I just invented on a beautiful afternoon when I was so excited to buy a beautiful jar of preserved lime from a familiar shop at the nearby market. This sauce has an elegant sour and salty taste from preserved lime, sweetness from onions, bell peppers, and brown sugar to create a balance. This sauce is great to serve with crispy fried US bone-in chicken legs bought at supermarkets. Sweet, fragrant chicken meat with crispy skin, moderate salty taste from fish sauce, mild spicy of pepper, and this preserved lime sauce. Oh, I love this dish!

Ingredients
- 1 US bone-in chicken leg
- 2tbsp fish sauce
- 1tsp pepper
- 1/2 preserved lime
- 1 garlic bulb
- 1/2 onion
- 1/4 yellow bell pepper
- 1/4 red bell pepper
- 2-3tsp brown sugar
- 2cọng Coriander
- water
- cooking oil
Instructions
Prepare the preserved lime sauce
- Process the ingredients: - Mince garlic. - Dice onion, red pepper, and yellow pepper. - Cut the coriander into small pieces. - Lightly crush lemon salt in a small cup.
- Put cooking oil in the pot, wait for the oil to heat, add in the pot: garlic, onion, red pepper, and yellow pepper, and stir. Then add the prepared the preserved lime in the pot.
- Put a little filtered water into the pot to cover the ingredients. Season with brown sugar, wait for the sauce to thicken, then turn off the heat and pour into a cup, sprinkle coriander on top.
Fry the chicken
- Marinate chicken with pepper and fish sauce. Let the spices evenly absorb.
- Put the oil in the pan, wait for the oil to be really hot, and fry the chicken in 2 sides. Then, take out on a plate and serve with the preserved lime sauce.
