Laurel waffle (mint ice cream cake)

What should we eat at Christmas and New Year Eve in the tropical land? According to me, we should eat CREAM, CREAM, and CREAM. Let “The House with Two Lives” and MGIFT share with you how to turn the familiar vanilla ice cream to a MINT ICE CREAM CAKE decorated like a laurel wreath! 😉

  • 450gr vanilla ice cream(~750ml)
  • 150gr crackers
  • 113gr unsalted butter(soft)
  • 4tbsp mint syrup
  • 1 chocolate bar(150g)
  • some rosemary branchesto garnish)
  • some raspberriesto garnish)
  • Cake mold with diameter of 20cm
  • Rolling mill or blender
  1. Keep ice cream in cool fridge to make it soft.
  2. Put the crackers in a bag and use a rolling pin to finely beat or crush crackers (or you can use a blender).
  3. Pour the crushed crackers into a removable bottom cake pan and add butter, mix well.
  4. Spread the mixture evenly on the bottom of the cake pan to make the cake base.
  5. Add mint to vanilla ice cream, and mix well.
  6. Break chocolate bar into small pieces, put into the mixture, and pour into the cake pan.
  7. Make some chocolate shavings and put on top of the cake pan. Place the cake pan in the freezer for at least 4 hours until the mixture freezes.
  8. Remove the cake from the cake pan, garnish with rosemary and raspberry to form a laurel wreath and small bell.
