Pennywort salad (Nộm rau má măng)
Pennywort salad is not boring and full of mountain flavors. It is what I learned from the natives on a trip to the Northwest.

Ingredients
  • 200gr pennywort
  • 1 fresh bamboo shoot (about 500gr)
  • 1 galangal (about 20gr)
  • 1 tsp soup powder (or salt)
  • 1 tsp MSG
  • 1 tsp lemon juice
  • ½ tsp sugar
  • A little roasted peanuts (crushed)
Instructions
  1. Wash pennywort and blanch through boiling water until it’s just cooked.
  2. Peel the bamboo shoots, cut into bite-sized slices. Boil 2 times to reduce bitterness.
  3. Finely pound galangal and peanuts.
  4. Mix all ingredients together and arrange on a plate.
