Pennywort salad (Nộm rau má măng)
Pennywort salad is not boring and full of mountain flavors. It is what I learned from the natives on a trip to the Northwest.

Ingredients
- 200gr pennywort
- 1 fresh bamboo shoot (about 500gr)
- 1 galangal (about 20gr)
- 1 tsp soup powder (or salt)
- 1 tsp MSG
- 1 tsp lemon juice
- ½ tsp sugar
- A little roasted peanuts (crushed)
Instructions
- Wash pennywort and blanch through boiling water until it’s just cooked.
- Peel the bamboo shoots, cut into bite-sized slices. Boil 2 times to reduce bitterness.
- Finely pound galangal and peanuts.
- Mix all ingredients together and arrange on a plate.
