Ingredients
Crust
  • 200gram unsalted butter
  • 70gram condensed milk
  • 45gram powdered sugar
  • 20gram cheese powder
  • 250gram flour No. 8
  • 80gram flour no. 11
  • Pinch salt
Filling
  • 2 pineapples
  • 100gram sugar
  • 70gram malt
Instructions
Making the filling
  1. Mince or puree pineapple, mix with sugar and malt, simmer on high heat until running out of water.
  2. Simmer on low heat until the filling is dry, flexible and can be formed into round pellets.
  3. Allow to cool and divide the filling into 15gr round pellets and put them to rest in refrigerator.
Making the crust
  1. Let butter soften in room temperature, whisk with salt and sugar to mix altogether.
  2. Add egg yolks in 1 and mix well.
  3. Ray all the flour into 2, mix well and let it rest for 30 minutes in the fridge.
  4. Divide the dough into 18 grams round pellets.
Wrap the filling and press on the mold
  1. Preheat the oven to 180 degrees for 15 minutes and then bake the pies for about 25 minutes until the pies turn browned.
  2. Allow to cool then take the pies out of the molds.
  3. Store the pies at room temperature for 1 week, or store in refrigerator for 1 month.
