Pumpkin Shrimp Soup

Ingredients
  • 1/2kg shrimp
  • 600ml water(for the broth)
  • 1 pumpkin(~750gr)
  • 1 onion
  • 2-3sticks celeries
  • 2bulbs garlic
  • 2tsp mixed fragrant leaves
  • 1tsp salt
  • 150ml whipping cream
  • 6tbsp olive oil
  • 2tbsp flour
Instructions
  1. Peel the shrimp shell.
  2. Put shrimp shells in a pot with 600ml of water to cook the broth. After boiling, skim off the foam, reduce heat, continue boiling for about 20 minutes, then take 400ml of the broth to cook the soup.
  3. Peel and dice pumpkin.
  4. Dice onion and celery.
  5. Peel garlic.
  6. Add olive oil to the pot, add onion, celery, garlic, and aromatic leaves, stir until the onion is just cooked, add shrimps, and stir lightly for shrimps to be cooked, then add pumpkin.
  7. Coat the flour onto shrimps and pumpkin, stir well. Until the flour is slightly browned, add the broth. Bring to a boil, skim off the foam, and then simmer for about 20 minutes until the pumpkin is soft.
  8. Let the pumpkin mixture cool down and put in a blender to blend, then pour back into the pot.
  9. Add fresh cream, stir well, season with salt.
  10. Sprinkle celery and pumpkin seeds on top of the soup.
