Steamed clams with pineapple and white wine

STEAMED CLAMS WITH PINEAPPLE AND WHITE WINE is the dish I learned from a sister who is my former boss. She is smart, beautiful, and especially good at cooking. Each time I make my own steamed clams, I remember her, I remember myself that day, and all the people who have walked with me through the unstable days full of enthusiasm of the youth.

Ingredients
  • 1kg clams
  • 1tbsp minced lemongrass
  • 1tbsp minced garlic
  • 1/4 tbsp chopped chili
  • 2tbsp cooking oil
  • 1/2 pineapple
  • 50ml rice wineor white wine
  • 100ml water
  • 3 lemongrasses
Instructions
  1. Wash clams, soak in water with pounded lemongrass for about 20 minutes to remove mucus and then wash again.
  2. Slice pineapple slices into small pieces. Put cooking oil, minced lemongrass, minced garlic, chopped chilli into the pot. Turn on the stove, stir until lemongrass and garlic turn slightly yellow. Add pineapple in, stir gently for about 2 minutes. Add wine, water and clams. Close the lid. When the clams open, turn off the stove.
  3. Use while it’s still hot.
