Stewed pork with ginkgo fruits (Thịt kho bạch quả)

Ingredients
- 200gr bacon
- 100gr ginkgo fruits
- 5 anise flowers
- 20gr shiitake mushrooms (dried)
- 2 shallots
- 6tbsp soy sauce
- 2 tbsp white wine
- 300ml fresh coconut water
Instructions
- Soak the shiitake mushrooms in warm water until the mushrooms rise, drain the water and let dry.
- Peel ginkgo fruits and remove the shells, keep the flesh.
- Shred shallots.
- Marinate the bacon with soy sauce, shallots, white wine for about 20 to 30 minutes.
- Put the pork in a pot, stir until the meat is cooked evenly.
- Add coconut water to boil, then skim off the scum and reduce the heat, boil until the water has drained to two-thirds.
