Rolled foods for rainy days

These days Saigon rains a lot and I am craving for rolled foods for snack or to eat with vegetables and vermicelli. Rolled foods are simple, light, and do not cause dyspepsia. Here are the recipes and how to make some of my favorite rolled foods. If anyone is craving for rolled foods like me, let’s go into the kitchen!

FISH FILLETS DIPPED IN VINEGARh

  • 400 gr fish fillets (any kind of fish)
  • 1 fresh coconut
  • Some white vinegar
  • 1 big onion
  • 1 lemongrass
  • Some ground pepper
  • Suggested to be served with: raw vegetables, rice paper, fish sauce seasoning.

MUSHROOM & TOFU ROLLS

  • 10 stalks green onion
  • 1/2 piece of tofu
  • 10 stalks coriander
  • 1/5 carrot
  • 10 shiitakes
  • Served with sweet fish sauce

COLORFUL PORK SAUSSAGE (CHẢ GIÒ NGŨ SẮC)

  • 50 grams shredded carrots
  • 50 grams shredded cucumber
  • 60 grams shredded cabbage
  • 100 grams shredded fried tofu
  • 60 grams chopped yellow bell pepper
  • 60 grams crushed roasted peanuts
  • 20 – 25 sheets rice paper
  • Some cooking oil
  • Some soy sauce, chili, garlic (for dipping sauce)

SALMON ROLL

  • 250 gr salmon
  • 1 cucumber
  • 1 carrot
  • 20 gr white sesame seeds
  • 20 gr black sesame
  • Rice paper (thin and transparent type)
  • 3 tbsp yellow mustard
  • 3 tbsp mayonnaise
  • 2 tsp honey
  • Water

SANDWICH ROLLED WITH VEGETABLES AND CHEESE

  • 8 sandwiches
  • 60 gr cheese (soft type)
  • 1/4 carrot
  • 3 pieces red apples
  • 1/4 cabbage
  • 1 pinch salt
