“World vegan day” was initiated in 1994 in United Kingdom by Mr. Louise Wallis to celebrate 70 years of establishment of “The Vegan Society” , and then speaded to other countries all over the world.

We have many friends both Vietnamese and foreigners who have permanent or periodic vegetarian diet not due to religious reasons. Some people are veggies to protect environment and animals. Some people are veggies for better health. We are none of the two above groups. We belong to the fourth group – we occasionally eat vegetarian foods to detox our bodies.

If you pay close attention, you will realize that a proper vegetarian diet still ensures you will be fully energized, and your body will be gentle, relaxed, and you will have a stable mind, without retaining too much desire or eagerness. Today, vegetarian dishes are not necessarily salted tofu with lemongrass or braised vegetables; moreover, vegetarian dishes should not be such dishes as “chicken thighs”, “fried shrimp”, “fish wrapped in betel leaf” which are made from flour and tofu. Vegetarian food is very diverse. You can cook anything, from Asian to European dishes, just use vegetables instead of meat and fish to make a vegetarian dish. It’s very simple and easy, right?

FRESH SHIITAKE MUSHROOM MIXED WITH BALSAMIC VINEGAR

Servings: 3-4 people

Time: 40 minutes

Ingredients

  • 250gr fresh shiitake mushroom
  • 3 tbsp soy sauce
  • some rosemary leaves
  • 1 tbsp balsamic vinegar

VEGETABLE PIE

Servings: 4-6 people

Time: 2 hours

Ingredients

Crust

  • 320gr all purpose flour
  • 1/2 tsp salt
  • 100gr unsalted butter
  • 8 tbsp ice water

Topping

  • 1 carrot
  • 100gr mushrooms
  • 50gr peas
  • 4 tomatoes
  • ½ small pumpkin
  • 10 tbsp tomato sauce
  • 3 tbsp olive oil
  • ½ tsp onion or garlic powder (optional)
