How to prepare artichoke flowers?
Today I received a box of vegetables and fruits from Dalat, including 1kg of young artichoke flowers. The flowers are tiny but sweet. In the afternoon, on the way home from work, I told my husband to drive me to the supermarket near my house to buy some ribs to stew with artichoke flowers.
It’s a bit difficult to prepare artichoke flowers!
1. First, cut the flower off the branch.
2. Then, use scissors to cut the sharpest part in the middle of the artichoke flower.
3. Next, cut off the top of each artichoke petal. I cut 1/3, leaving 2/3.
Now the artichoke flower looks so beautiful!
4. After that, use a knife to halve the flower.
5. Then take the pistil out! The reason I take out the pistil is that with the soup, usually we only eat the flesh on the lower part of the petals, so removing pistil will make it convenient for you ^_^
6. Finally, rinse with clean water and drain.
With young branches, you can peel off the skin to get the very soft inside!
During the preparation of artichoke flowers, I put young ribs and 1 sauteed onion in a pot of water with a pinch of salt, bring to a boil, skim off the foam and reduce the heat. When finishing preparing the artichoke flowers, put them in the rib pot, add a few bay leaves, simmer for about 1 hour. So that’s it! Before you eat, sprinkle a little green onions or leek and ground pepper on top. *Yummy*
