Recipe Notes

How to choose good crab:

  • You can choose either female crab or male crab to cook Cajun crab. Crab meat will help to make the dish less fat.
  • To distinguish male and female crabs, you can look at its shell. If its shell has the shape of a triangle, it is a male crab, if the shell has the shape of a square, it is a female crab. The female crab will usually have roe, if you look at the crab shell under the light, usually the part of the crab with roe will be a bit more yellow than the other parts.

If you lift a crab and the crab is still struggling vigorously, if you press your hand into the crab shell and you feel hard, the crab should be meaty, fresh and delicious.
